This week I’ve had a crazy obsession with making quesadilla’s! There is something about cheese and carbs right!?
My favorite combination so far is below:
1 cup spinach
1/2 cup cheese ( I use taco cheese)
1 egg
1 cup of ground turkey
1 flour tortilla
(any seasoning is optional)
Cook spinach and ground turkey together on medium heat.
Once ground turkey is almost done cooking, crack an egg in and stir around while it cooks to your desired consistency.
While that is cooking get a plate and lay out your tortilla. Now hang with me here, but I take pesto and spread a desired amount on the tortilla. I then place a layer of cheese on ONE HALF of the tortilla.
Now that your meat, spinach and egg is done, grab a spatula and scoop it from the pan onto the CHEESE half of the tortilla. Pack in the ingredients tightly then fold the empty half over the top and press down. Then use the spatcula to place the folded quesadilla BACK onto the warm pan. Toast each side until golden crispy and ENJOY!
